Mascarpone (250 g) mix with allulose (35 g) until smooth and creamy. Chill the filling in the refrigerator or freezer for a few minutes so it firms up.
Fill candy molds with the mascarpone mixture, place raspberry (90 g total) in each cavity, and cover with the remaining cheese mixture. Freeze overnight until the candies are fully firm.
Cocoa butter (20 g): melt it, add grated cocoa (80 g), and stir into a smooth glaze. Dip the frozen candies into the chocolate mixture, then chill again until the coating sets.
