Mix greek yogurt (240 g) with olive oil (54 g), sea salt (1 g), black pepper (1 g), and garlic (3 g, optional).
Transfer the mixture to a sieve lined with three or four layers of cheesecloth, set it over a bowl, and cover it. Refrigerate for 24–48 hours until thick, then move the labneh to a covered container.
