Country Liver Sausage

Rinse the offal. Boil the pork feet separately for about 3 hours; boil the head, heart and lung for about 3 hours until tender.

Remove bones and grind the meat and offal. Add salt, garlic and black pepper.
Add the strained foot broth little by little and mix to a soft pate-like texture. Stuff into natural casings and twist into links.
Blanch the links in boiling water for 5-7 minutes. Lift them by the twists to avoid tearing the casing.
Optionally brown in the oven at 150 °C for about 1 hour or fry gently in a pan.
