Grind pork and part of the fat coarsely, chill, then grind finely or process. Dice the remaining fat and freeze.

Mix the chilled mince with salt, spices, phosphate and ice water until sticky.

Scald the fat cubes with boiling water. Soak and peel the pistachios.

Fold fat and pistachios into the mince, stuff casing and cook at 50-60 °C to 50 °C inside, then with steam at 80 °C to 70-72 °C.
