Slow-Cooked Turkey Giblets
Turkey giblets provide plenty of protein, iron, and B vitamins, so the dish is very filling and nutrient-dense. Long slow cooking with onion softens both the flavor and the texture. It is a good keto choice for an unhurried meat-centered dinner.
Inspect turkey hearts (500 g), turkey gizzards (500 g), and turkey liver (500 g), trimming off excess fat, remaining membranes, and any bitter bile-stained areas. Slice onion (500 g) into half-rings and crush garlic (20 g) lightly with the flat of a knife.
Place the giblets and onion into a baking dish, add ghee (30 g), bay leaf (4 g), fresh thyme (3 g), khmeli-suneli (3 g), salt (to taste), and black pepper (to taste). Cover the dish tightly with a lid or foil.
Cook in the oven for 3 hours at 145-150 C. By the end, the gizzards should be tender, the hearts fully cooked, and the liver still juicy. Serve hot or cool and portion into containers.
