Baked Turkey Sausage
Turkey provides protein, while cream helps keep the texture softer and juicier. That makes this homemade sausage a good fit for a keto snack, breakfast, or meat platter.
Cut turkey thigh (800 g) into small pieces and combine it with turkey mince (500 g). Add 30% cream (150 g), dried garlic (2 g), cardamom (2 g), salt, mixed pepper, and knead the mass thoroughly by hand until the moisture and spices are distributed evenly.
Cover the mixture with film and refrigerate it overnight so it can mature and firm up. Cut a roasting sleeve open lengthwise, dust one side lightly with smoked paprika (2 g), place half of the meat mixture on it, and shape a tight sausage. Repeat with the second half.
Transfer both sausages to a baking tray and bake in a preheated 180 degrees C oven for about 1 hour. Let the sausage cool slightly before slicing so it holds its shape better and stays juicy inside.
