Wash the oyster mushrooms (500 g) under running water and let the liquid drain. If necessary, trim the tough stems.

Cut the mushrooms into pieces randomly. Slice the onion (1 piece) into half rings or cubes. Peel the garlic (2 cloves) and chop finely.

Heat the clarified butter (2 tbsp) or avocado oil (2 tbsp) in a pan. Add the mushrooms and fry over medium heat for 10 minutes, stirring occasionally, until the liquid evaporates.

Add the onion and the remaining oil, mix well. Sauté for another 7–10 minutes, until the onion becomes translucent and the oyster mushrooms are lightly browned.

Season with salt (to taste) at the very end, so the mushrooms do not release excess moisture. Add ground black or white pepper to taste.
