Ingredients: White mushroom (1000 g), parsley (40 g), chili pepper (15 g), garlic (35 g), olive oil (100 g), table salt (5 g).
Choose porcini caps of similar size, clean them and remove the stems.
Clean the chili and garlic, chop the parsley and use half of the aromatics.
Grind half of the aromatics with salt and olive oil in a mortar.
Set the caps convex side down in a ceramic dish, pour over the mortar sauce and sprinkle with the remaining parsley, garlic and chili.
Bake uncovered at 210°C for 13 minutes and serve hot.
