Mix sugar-free mustard (30 g), olive oil (27 g), salt (10 g), sweet paprika (7 g), dried garlic (3 g), ground coriander (2 g), and black pepper (1 g). Pat the pork ham (1000 g) dry, coat it on all sides with the marinade, place it in a roasting sleeve, and refrigerate overnight.
Preheat the oven to 180°C. Bake the meat in the sleeve for 1 hour, then cut the sleeve open and brown the pork for another 30 minutes. Let the meat rest briefly before slicing so the juices settle inside the piece.
