Mince the garlic (40 g) and mix it with salt (15 g), pepper, paprika (7 g), horseradish (15 g), mustard (30 g), and olive oil (30 g). Coat the pork (2 kg) on all sides and marinate for 2 hours.
Wrap the meat in foil and bake at 170°C for 2 hours. Unwrap it and brown for another 30 minutes.
Cool the roast, wrap it tightly, and refrigerate for at least 8 hours before slicing.
