Halve the eggplant (400 g) lengthwise, scoop out the pulp, and dice it. Cut the bacon (200 g) into small pieces.
Fry the eggplant pulp and bacon in sunflower oil (50 g) until the eggplant is tender and the bacon is browned. Grate brynza (200 g) and mince the garlic (12 g).
Combine the brinza, garlic, mayonnaise (homemade or sugar-free) (50 g), walnuts (70 g), and the fried eggplant-and-bacon mixture. Season with table salt (to taste) and black pepper (to taste).
Fill the eggplant halves with the mixture and bake at 180°C for 35 minutes.
