Pat the salmon (1500 g) dry, pour over vodka (100 g), leave for 5 minutes and blot away the excess.
Zest the lemon (20 g). Mix table salt (200 g), erythritol (100 g), white pepper (10 g) and ground clove (20 g). Rub the salmon with the mixture, then cover it evenly with finely chopped dill (100 g) and grated beetroot (500 g).
Cover the fish and refrigerate for 2–3 days, turning the fillet several times.
Shake the beetroot off the cured salmon, slice the fish thinly and serve chilled.
