Cut the turkey fillet (150 g) into thick slices across the grain, then carefully pound it to a thickness of about 0.3-0.5 cm. After that, season the meat with salt and pepper to taste.
For the breading, beat an egg (1 piece) and evenly distribute it over the prepared turkey slices. Then coat the meat in coconut flour (2 tbsp), ensuring an even coverage.
Heat olive oil (1 tbsp) in a pan over high heat.
Fry the schnitzel on both sides for 1-2 minutes until golden brown and fully cooked. Be careful not to overcook the meat.
