Combine the apricot flesh (280 g), mandarin juice (29 g), passion fruit pulp (26.1 g), water (78 g), allulose (75.4 g), inulin (9.6 g), and ice-cream stabilizer (1.9 g) in a saucepan. Blend until smooth.
Stir the base constantly while heating it to about 85 °C, then remove it from the heat.
Transfer the base to a container, cover it with cling film touching the surface, and refrigerate for 10–12 hours to stabilize.
Freeze the base in an ice-cream maker for 40–60 minutes, until smooth with fine ice crystals. Serve promptly.
