Pat the cod (700 g) dry. Dice the tomato (400 g), leave the olives (50 g) whole, and cut the lemon (30 g) into wedges. Finely chop the parsley (20 g) and garlic (6 g), measure the capers (15 g), and set aside the olive oil (30 g) for frying. Add table salt (to taste).
Pat the cod dry again, season it with salt, and sear it in the oil for 3–4 minutes per side. Cook the garlic in the same skillet, add the tomato and capers, and simmer for 10–15 minutes. Return the fish to the sauce and finish covered for 5–7 minutes. Serve with parsley and lemon.
