To prepare the casserole, you will need the following ingredients:
- grated mozzarella (128 g) – or to taste, use low-moisture cheese
- almond flour (50 g)
- 1 round of brie cheese (200 g) or another cheese to taste
- 2 tablespoons of mashed berries with a sugar substitute
- Optional: 1-2 tablespoons of chopped walnuts
Preheat the oven to 180 °C.
Place the shredded mozzarella (128 g) in a deep plate and heat in the microwave for 50-70 seconds, checking once or twice. Alternatively, melt it on the stove over low heat.
Add the almond flour (50 g) and mix well using a fork until a dough forms.
Roll out the dough between 2 sheets of parchment paper until it is large enough to wrap around the brie cheese (200 g). Place the brie in the center of the dough and add the berry jam. Chopped walnuts can be added if desired.
Then wrap the dough around the cheese to create a pouch and pinch it closed with your fingers. Place the casserole in the oven and bake for 15-18 minutes or until golden brown on top.
Remove the casserole from the oven and let it cool for 5 minutes before slicing.
