Combine the beef mince and pork, add ice-cold water (150 g), and mix until sticky protein threads appear. Keep the mixture below 8-10 °C.
Stuff tightly into casing and refrigerate the loaves at 2-4 °C for 12-24 hours. Before cooking, warm them to 14-16 °C inside.
Cook in the oven: roast at 90 °C with convection for 30-50 minutes, then lower to 80 °C, add a tray of hot water, and cook until the center reaches 69 °C.
