Zucchini Tarts with Ground Meat and Bacon
Zucchini adds a little fiber, while beef, bacon, and mozzarella make the dish richer in protein and more filling. Baking keeps the center juicy, so these savory tarts work well for a keto dinner.
Peel the zucchini (600 g) and cut it into 1-1.5 cm rounds, then remove the center to form sturdy rings. Grind the beef (400 g) or use ready ground meat, combine it with onion (80 g), garlic (10 g), egg (50 g), salt, and black pepper, and mix the filling well.
Lay the bacon (250 g) strips on the board. Place a zucchini ring on top, fold the bacon edges inward, and pack the center with the meat filling.
Transfer the pieces to a parchment-lined tray and bake at 180°C for 30 minutes. Sprinkle each tart with mozzarella (100 g) and bake for 10 minutes more until the cheese melts and lightly browns.
