Soft cream cheese cookies
A source of healthy fats and protein, this cookie has a delicate texture and rich flavor thanks to cream cheese and mascarpone. Perfect for a keto snack, it satisfies sweet cravings without carbs.
In a deep bowl, combine room temperature cream cheese (3 tbsp) and room temperature butter (50 g) using a mixer until smooth.
Then add:
- 1 large egg
- 8 tbsp coconut flour
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/2 tsp baking powder
Whisk all the ingredients together.
Place the dough in the freezer for 10 minutes to firm up a bit, making it easier to shape the cookies.
Preheat the oven to 175 °C.
Then shape about 20 small round cookies and place them on a baking sheet lined with parchment paper.
Bake the cookies in the preheated oven for 15 minutes, until they turn golden brown.
If desired, before serving, sprinkle the cookies with a mixture of erythritol (1 tbsp) and cinnamon (0.5 tbsp) for added aroma and sweetness.
