Recalculate the sweetener. (Erythritol)Adjust the baking time according to thickness.
Grease the mold with Butter (5 g). Prepare Egg (200 g): separate the whites from the yolks, then beat the whites with Erythritol (50 g) until firm peaks form.
Mix Ricotta (400 g) with the yolks, Lemon (60 g), Vanilla (1 g), and Xanthan gum (3 g). Fold in the beaten whites in two additions with a spatula so the mixture stays airy.
Transfer the mixture to a 17 cm mold and bake at 160°C for 50 minutes. Let the cake cool, remove it from the mold, and chill it in the refrigerator for 8 hours to set.
