Mix Ricotta (400 g) with the yolks, Lemon (60 g), Vanilla (1 g), and Xanthan gum (3 g). Fold in the beaten whites in two additions with a spatula so the mixture stays airy.
Transfer the mixture to a 17 cm mold and bake at 160°C for 50 minutes. Let the cake cool, remove it from the mold, and chill it in the refrigerator for 8 hours to set.
