Beet and avocado salad – a light, non-strict keto salad with fresh cucumber, lettuce leaves, mandarin, and a cashew cream sauce. There is a small amount of beet and mandarin here, so it’s better to eat the salad in moderation.

First, prepare the cashew cream sauce.

Dice the boiled beet (80 g), cucumber (40 g), and avocado (40 g) into cubes of about 1 x 1 cm. Peel the mandarin (30 g) and cut the segments crosswise into 2-3 pieces.
