Spinach sauce with cilantro and pine nuts

Spinach sauce with cilantro, pine nuts, and olive oil is bright, fresh, and rich. It can be served with vegetables, fish, appetizers, or used as a thick green dressing.

Chop spinach (60 g), cilantro (30 g), onion (30 g), and garlic (10 g) coarsely to make it easier for the blender to process the greens.

In a blender, combine spinach, cilantro, pine nuts (100 g), onion, garlic, lemon juice (20 g), wine vinegar (20 g), olive oil (90 g), water (100 g), and salt (7 g).

Blend until you have a smooth green sauce. Taste and adjust the flavor with salt, lemon juice, or vinegar if necessary.

Transfer the sauce to a clean jar and store in the refrigerator with a lid for up to 2-3 days.
