Mix almond flour (150 g) with room-temperature butter (75 g). Add egg (50 g), finely grated hard cheese (50 g), a pinch of salt and mix into a soft even dough.
Refrigerate the dough for 20 minutes. Divide it into 12 pieces, shape small balls with wet hands, place them on a parchment-lined baking sheet and flatten slightly.
Bake the cookies at 170°C for about 15-17 minutes, until the edges turn golden. Let them cool completely on the baking sheet so the texture firms up.
