Grind the turkey liver (500 g) and turkey hearts (500 g). Dice the pork fat (150 g). Add paprika (5 g), nutmeg (1 g), dried garlic (3 g), curing salt (7 g), Himalayan salt (5 g), and black pepper (2 g).
Soak the natural casing (30 g) in cold water for 10 minutes, then rinse it. Fill the casing with the mixture using a sausage nozzle and place it in a baking dish.
Pierce the casing with a toothpick and bake at 180°C for about 40 minutes.
