Stir the egg (150 g) with salt and pepper mix to taste, without whipping it into a stiff foam. Rinse and dry the spinach (10 g), and cut the Camembert (20 g) into small pieces.
Melt the ghee (10 g) in a small skillet and pour in the egg mixture. Cook the omelet over low heat for about 4 minutes, gently moving the set edges toward the center.
Scatter the spinach and Camembert on top, cover for another 2 minutes, so the cheese starts to melt. Fold the omelet in half or roll it up and serve warm right away.
