Sprinkle salmon (700 g) with table salt (5 g) and leave for 20 minutes. Mix miso paste (115 g), sake (15 g), mirin sauce (15 g), and sesame oil (10 g).
Rinse and pat dry the fish, coat it with the marinade, and refrigerate for 8–12 hours.
Wipe off excess marinade and roast the salmon at 200°C for 10–12 minutes until cooked. Grate daikon (170 g) and ginger (15 g), and serve them with the fish.
