Remove the mussels (200 g) from their shells, rinse, and pat dry. Finely chop the garlic (8 g).
Place the mussels in a baking dish, add garlic, herbes de Provence (1 g), black pepper (1 g), and salt to taste. Mix so the mussels are evenly coated with the aromatic mixture.
Dot the top with small pieces of ghee (30 g). Bake the mussels at 200°C for about 18 minutes, until the ghee melts and the mussels are hot and fragrant.
