Preheat the oven to 150 °C and line a tray with parchment. Pulse pecans (100 g) with almond flour (55 g), erythritol (45 g), starch-free baking powder (4 g), and sea salt (2 g), leaving a fine nut crumb.

Add melted butter (22 g) and egg white from egg (35 g). Mix into a sticky, moist dough.

Shape 12 small flat cookies. Bake for 15 minutes, until the edges lightly brown, then cool completely.

Melt 85% chocolate (30 g), drizzle over the cookies, and add a few extra grains of sea salt if desired.
