Preparation of the base
To prepare the base, place the cauliflower (400 g) in a blender and grind it into fine crumbs. Then transfer it to a microwave-safe container, cover with a lid, and cook on high power for about 8 minutes.
Place the cauliflower in a fine sieve and squeeze well to remove excess liquid. Transfer to a large bowl and let it cool for 15 minutes.
Meanwhile, preheat the oven to 220 °C and prepare a baking sheet by lining it with parchment paper.
In the cooled cauliflower, add eggs (6 pcs.) and grated cheese (60 g), and mix thoroughly. Season the mixture to taste and spread it on the prepared baking sheet, shaping it into a round form.
Bake for 15 minutes until the base is golden.
Preparation of the topping
When the base is ready, brush it with vegetable oil (1 tsp) and tomato paste (1 tsp).
Evenly distribute the remaining topping ingredients:
- Cherry tomatoes, chopped (150 g)
- Ham, diced (200 g)
- Sweet red pepper, chopped (1/2 pcs.)
- Onion, sliced into half-rings (1 pcs.)
- Pickled cucumbers or gherkins, sliced (3 pcs. or 6 pcs.)
- Hard cheese, grated (180 g)
- Salt (1 tsp)
- Black pepper and herbs to taste.
Bake the pizza for another 15 minutes until the cheese melts and turns golden.
