Adjust the baking time according to thickness.
Finely grate the Parmesan (30 g) and mix it with the almond flour (10 g), Italian herbs (1 g), and black pepper (1 g). Add the egg yolk (18 g) and mix.
Line a baking tray with parchment. Roll small balls, place them on the tray, and flatten them with wet hands to about 1 mm thick.
Bake the chips at 200°C for about 8 minutes, until the edges are golden. Cool them on the tray before removing them from the parchment.
