Veal Rolls in Tomato Sauce
Veal rolls with bacon are braised in tomato sauce with sage. Veal provides protein, and the sauce becomes part of the finished dish.
Ingredients: veal (480 g), bacon (120 g), butter (40 g), tomato (400 g), onion (150 g), garlic (10 g), sage (2 g), table salt (3 g), black pepper (to taste).
For the sauce, finely chop the onion and garlic. Melt the butter, add the onion, garlic, tomatoes and sage, season and simmer for 5–7 minutes.
Pound the veal escalopes lightly, season them and place a strip of bacon on each. Roll them with the bacon inside and secure with toothpicks.
Melt the remaining butter in a separate pan and brown the rolls on all sides for about 2 minutes, then leave them aside.
Transfer the rolls to the tomato sauce, cover and braise over medium heat for about 20 minutes. Remove the toothpicks before serving.
