To prepare the keto biscuit, you will need the following ingredients:
- almond flour (125 g)
- erythritol (150 g) or to taste
- 1 teaspoon of baking powder
- 1/4 teaspoon of salt
- 4 large eggs
- cream cheese, softened (100 g)
- butter, softened (57 g)
- vanillin to taste
Preheat the oven to 170 °C (fan) or to 190 °C (regular).
In a deep bowl, mix erythritol (150 g) with softened butter (57 g) and cream cheese (100 g).
Using a mixer, add the eggs (4 pcs.) one by one at low speed, beating well after each addition. Then add vanillin to taste.
In a separate bowl, combine almond flour (125 g) and salt (1/4 tsp). Gradually add the dry ingredients to the egg mixture, continuing to beat until smooth.
Prepare several round baking pans by greasing them with butter. Pour the batter into the pans and place in the preheated oven for 45-60 minutes.
