Preheat the oven to 200 C. Finely chop onion (100 g) and cilantro (10 g).
Mix beef (600 g) with onion, cilantro, harissa paste (15 g), cumin (2 g), table salt (to taste), and black pepper (to taste). Shape walnut-sized meatballs and put three on each skewer.
Fry the meatballs on all sides in hot olive oil (60 g) for about 3 minutes. Transfer them with the oil to a baking tray.
