Take the yolks from 6 hard-boiled eggs and mash them thoroughly with a fork until smooth.
After that, add to the yolk mixture:
- 1 hard-boiled white, finely chopped;
- 60 g of diced bacon (or lard), finely chopped;
- 140 g of melted butter;
- 50 g of pickled gherkins (or cucumbers), finely chopped;
- salt and pepper to taste.
Mix all the ingredients well until you achieve a uniform consistency.
After that, place the mixture in the refrigerator for 20–30 minutes.
Remove the mixture from the refrigerator and, wetting your hands, shape 9 small balls.
Roll each ball in nut flour (9 tbsp) to create an appetizing crust.
Place the finished balls in the refrigerator for 2–4 hours.
Store the “Olivier” rolls in a sealed container in the refrigerator.
