Wrap the mozzarella mini-balls (240 g) with basil leaves (10 g), then with strips of bacon (240 g). Refrigerate the pieces.
Pour the balsamic vinegar (100 g) into a small saucepan and reduce it by about half.
Heat the olive oil (45 g) and fry the appetizer for 2–3 minutes, turning it, until the bacon is golden. Transfer the pieces to a plate.
Return the reduced vinegar to the heat for 1 minute, season with table salt (to taste) and black pepper (to taste), then pour it over the hot pieces and serve.
