Clean, gut, and dry sea bass (1200 g, 4 fish). Rub the fish inside and out with table salt and black pepper.

Melt ghee (50 g), then mix it with finely chopped garlic (8 g) and thyme (1 g). Brush the sea bass with the garlic butter, reserving some for basting during baking.

Place the fish on a baking tray and bake at 200°C for about 30 minutes. Brush it again halfway through; the fish is ready when the flesh is opaque and flakes easily away from the backbone with a fork.
