Foil-Baked Sea Bass with Lemon and Herbs
White fish provides delicate protein and stays juicy in foil. Citrus, herbs, and fish sauce keep the flavor fresh, savory, and bright without a sugary dressing.
Prepare the ingredients: sea bass (350 g), carrot (30 g), bell pepper (30 g), celery stalk (15 g), lemon (20 g), lime (55 g), garlic (5 g), parsley (8 g), basil (3 g), table salt (2 g), fish sauce (50 g), chili pepper (8 g), erythritol (5 g), cilantro (5 g).
Clean the sea bass, rinse it, and rub with salt. Put the garlic, parsley, and basil inside the belly, and tuck lemon slices and part of the lime into the cuts on the skin.
Place the fish on parchment inside foil, arrange the carrot, bell pepper, and celery alongside it, then wrap tightly.
Bake at 190 C for 20-25 minutes. For the dressing, mix the fish sauce, lime juice, chili, erythritol, and cilantro and spoon it over the cooked fish.
