Cut the pork (800 g) across the grain into 1.5–2 cm steaks. Mix the olive oil (20 g), sugar-free mustard (10 g), rosemary (1 g), thyme (1 g), basil (1 g), paprika (3 g), dried garlic (2 g), Himalayan salt (5 g), and black pepper (2 g). Rub the steaks with the marinade and leave them for 10 minutes.
Place the meat on a baking tray and bake at 220 °C using the grill or top-and-bottom heat for 20 minutes. Check that the meat is cooked before serving and slice the steaks across the grain.
