Whisk the eggs (2 pcs.) into a fluffy mass.
Add to them:
- almond flour (50 g);
- coconut flour (30 g);
- erythritol (2.5 tbsp.);
- baking powder (1 tsp.);
- vanilla extract (1 tsp.);
- a pinch of salt.
Thoroughly mix all the ingredients until a homogeneous dough is formed.
Heat a pan over medium heat and melt coconut oil (1 tsp.) in it.
Using a spoon, place a portion of the dough onto the pan. Fry the syrniki until golden brown, about 2–3 minutes on one side, then carefully flip and cook for another 2–3 minutes on the other side.
