Avocado toast on keto bread – a quick breakfast or snack with soft avocado, cilantro, a hint of lemon, and toasted pine nuts. Instead of regular bread, ready-made keto bread is used here, so the recipe remains low-carb.
Prepare 2 slices of ready-made keto bread (80 g). It’s better to take toast bread or another neutral low-carb bread and lightly dry the slices in a toaster, on a grill, or in a dry pan.
Rub the hot toasts with a clove of garlic (5 g) so that the bread gets a light aroma but doesn’t become too sharp.
Cut the avocado (200 g) in half, remove the pit, scoop out the flesh with a spoon, and transfer it to a bowl. Add olive oil (30 g), lemon juice (30 g), finely chopped cilantro (10 g), and salt.
Mash the avocado with a fork into a coarse puree. Taste and add a bit more salt or lemon if necessary to make the flavor bright and fresh.
Toast the pine nuts (10 g) in a dry pan for a few minutes, stirring, until golden brown and fragrant.
Spread the avocado puree on the toasts, and sprinkle with the toasted pine nuts on top. Optionally, add freshly ground black pepper and serve immediately while the bread is not soggy.
