Baked Mackerel in Spiced Marinade

Prepare the mackerel (1000 g): remove the head and entrails, then rinse and pat the fish dry. For the marinade, boil water (1000 g) with allspice (5 g), cloves (1 g), coriander seeds (5 g), bay leaf (1 g), black pepper (3 g), and table salt (18 g), then simmer the mixture for about 15 minutes.
Cool the marinade completely, pour it over the fish, and refrigerate overnight so the spices can fully infuse the mackerel.
Transfer the fish to a parchment-lined baking dish, add ghee (15 g) on top, and bake at 180 degrees C for about 30 minutes. Serve hot or slightly cooled.
