Clean and gut the arctic char (800 g), rinse and pat dry. Drizzle the cavity with lemon (200 g).

Finely chop cilantro (50 g), crush garlic (20 g) and grind coriander (cilantro seeds) (10 g). Pound them with olive oil (30 g), table salt (8 g) and black pepper (2 g).

Fill the fish cavities with the marinade and leave for 1 hour.

Grill the arctic char for 3–4 minutes on each side, then finish in an oven at 180 °C for another 10–12 minutes. Serve hot.
