Heat coconut cream (400 g) to about 50°C without boiling. Add the squeezed gelatin and stir until it dissolves completely.

Pour the coconut mixture into the glasses, add chia seeds (16 g), and gently stir each portion. Refrigerate the dessert for about 2 hours, until it sets and becomes firmer.
