Beat the ground veal (350 g) against the bowl several times so the mixture becomes denser. Finely chop the bacon (60 g), onion (40 g), and garlic (10 g).
Mix the veal, bacon, onion, garlic, salt, and pepper mix to taste. Shape small cutlets, trying not to make them too thick.
Heat the ghee (5 g) in a skillet and fry the cutlets for 2 minutes on each side over high heat. Lower the heat, cover, and cook for another 5 minutes, then let the cutlets rest for 5 minutes before serving.
