Mix all the dry ingredients:
- the zest of one lemon;
- baking soda — 1 tsp;
- ground sesame seeds — 1/2 cup;
- ground flaxseeds — 1/2 cup;
- whole sesame seeds (white and black) — 2 tbsp;
- almond flour — 1/2 cup;
- coarse sea salt — 1/2 tsp.
If desired, you can add various spices such as nutmeg or coriander to give the bread a special aroma.
Then add the remaining ingredients:
- tofu or ricotta — 200 g;
- plant-based milk — 200 ml.
And mix with a whisk. The mixing should be long enough to aerate the dough, which will make it fluffier and lighter.
Place the dough in a mold and send it to a preheated oven at 180 degrees Celsius. Bake for 30-40 minutes.
