Break an egg (1 piece), add salt (a pinch), and optionally, a little coconut milk (1 tbsp) and turmeric (on the tip of a knife). Whisk the mixture thoroughly with a whisk.

Heat a pan with clarified butter (1 tsp) or avocado oil. Pour in the egg mixture and fry on both sides until lightly golden brown. Make several such pancakes.

On each pancake, place a lettuce leaf (1 piece), canned tuna (2 tbsp), and finely chopped tomatoes (2 tbsp).

Add a little homemade mayonnaise (1 tsp) or guacamole (1 tsp) to taste.

Carefully roll the pancake into a roll and cut into serving pieces. If desired, secure with toothpicks.

You can make a denser roll by using a slightly thicker egg pancake.
