Hake in Peanut Tomato Sauce
Hake is fried and finished in a thick tomato and peanut sauce. Fish and peanuts add protein, and the dish is best served hot.
Ingredients: hake (1000 g), peanuts (300 g), tomato (300 g), onion (100 g), chili pepper (20 g), garlic (10 g), ginger (15 g), peanut butter (30 g), table salt (5 g), black pepper (2 g).
Rinse and dry the hake, cut it into large pieces, season with salt and pepper, and fry it in peanut oil until lightly golden. Leave it aside.
Chop the onion and tomatoes and simmer them in the peanut oil for 10 minutes.
Blend the peanuts into a coarse flour. Add three quarters of the garlic, ginger and chili, pour in water, cover and simmer the sauce for 15 minutes.
Add the hake and ground peanuts to the sauce and simmer for 10 minutes. Add the remaining chili and simmer for 8 minutes until the sauce thickens.
