Cut duck (2000 g) into large pieces and place them in a baking dish. Add meat broth (100 g), garlic (15 g), anise (1 g), Dijon mustard (5 g), thyme (2 g), ghee (40 g), salt (15 g), white pepper (2 g), nutmeg (1 g), bay leaf (2 g), and lemon zest (5 g), cover, and cook at 140 C for about 2.5 hours.
