Adjust the baking time according to thickness.

Separate eggs (250 g) into whites and yolks. Whip the whites with cream of tartar (2 g), and whip the yolks with erythritol (30 g), vanilla (to taste), and turmeric (to taste).

Finely grate the mozzarella (200 g). Combine both mixtures and gently fold in the grated mozzarella. Add psyllium (10 g), bamboo fiber (20 g), and baking powder without starch (10 g), then apple cider vinegar (20 g).

Bake in a foil-covered pan at 180°C for 50 minutes, remove the foil, and bake 10 minutes more. Cool for 10 minutes, then cool completely.
