Pat dry the lamb (700 g). Crush garlic (12 g) with fresh rosemary (5 g), table salt (8 g), and black pepper (2 g), rub it over the ribs, and leave them for 20 minutes.

Roast the lamb at 190 °C for 30–35 minutes until browned and the internal temperature reaches at least 63 °C. Rest the meat for 5 minutes.

For the sauce, mix miso paste (80 g), sesame oil (25 g), chopped chili pepper (5 g), erythritol (20 g), lemon juice (40 g), and green onion (40 g). Brush the hot ribs with the sauce and serve.
